A Puerto Vallarta-born chef, in love with the town and the endless possibilities it has to offer.
Trained in high-pressure kitchens, he began shaping his own style before even realizing it. Growing up and moving through different ports from an early age shaped a free-spirited and irreverent approach to understanding cuisine.

Today, Itamar Cocina de Puerto and Escamar Raw Bar are the result of more than 10 years of experience, where the product, the surroundings, and a cuisine rooted in making the most of every ingredient take center stage.

A natural at serving others, with a professional career developed in Five Diamond hotel chains throughout Puerto Vallarta and Riviera Nayarit.
An expert in Mexican spirits, he holds certifications in Mezcal, Tequila, and Raicilla, while also being a natural ambassador for the region's distinctive spirits.
His greatest strength is his family, while his passion for service and his humility are part of his DNA.
